Three Berry Blend Cobble

Ingredients:
- 2 ⅛ cups Columbia Fruit frozen Three Berry Blend
- 4 tbsp white granulated sugar, plus 2 tbsp
- ½ lemon
- 8oz self-rising flour, plus 2 tbsp, plus extra for dusting
- 5 fl oz single soy cream, plus extra for serving
Preparation:
- Preheat the oven to 400°F.
- Add the frozen berries to a 1-liter ovenproof dish along with the 4 tbsp of granulated sugar, the juice from the lemon and 2 tablespoons of self-rising flour.
- Mix everything together (you might have to wait a few minutes for the berries to thaw a little).
- Prepare the dough by combining the remaining 8 oz of self-rising flour, remaining 2 tablespoons of granulated sugar, a pinch of salt and the soy cream in a mixing bowl to make a dough.
- Flour your hands and divide and roughly shape the dough into 8 balls, then place them evenly on top of the berries.
- Bake in the oven for 25–30 minutes or until the cobbler topping is risen, cooked and golden brown.
- Remove the cobbler from the oven and leave it to cool for 10 minutes, before serving with a generous helping of extra soy cream.
