Mango Lassi

Ingredients:
- 2 cups Columbia Fruit frozen Mango Chunks
- ⅓ cup buffalo curd or Greek-style yogurt
- 2 cups milk
- 1 tablespoon sugar, or 1 teaspoon salt, depending on whether you’d like your lassi sweet or salty
- juice of 1 lime
- ice cubes or crushed ice, to serve
- 2 lemon slices, to serve
Preparation:
- Add the mango, buffalo curd, milk and sugar or salt to a blender.
- Pulse, then blend for 2 minutes, until the mixture is thick but not runny.
- Adjust the sweetness or saltiness to taste.
- Add a squeeze of lime juice and blend again.
- Add some ice cubes or crushed ice to two glasses.
- Pour in the lassi mixture and serve each with a slice of lemon.
