Cherry Berry Blend Bread & Butter Puddings

Ingredients:
- 4-6 croissants or danish pastries
- 1 cup Columbia Fruit frozen Cherry Berry Blend
- ½ cup chocolate buttons, optional
- 1 banana, sliced
- 4 eggs, beaten
- 13oz cream
- 2 tsp vanilla extract
- ¼ cup soft brown sugar
- 1 tsp ground cinnamon
- 2 tbsp demerara sugar or raw sugar
Preparation:
- Preheat oven to 350°F.
- Grease and line a 20cm cake tin for a single pudding or make individual desserts in a 6 hole large Texas sized muffin pan.
- Line with cupcake cases.
- Cut the croissants roughly into 2cm pieces.
- Place in a bowl with the berries, chocolate buttons and banana.
- In a separate bowl mix together the eggs, cream, vanilla and brown sugar until combined.
- Pour over the croissant mixture and stir well.
- Fill the tin or tins with the mixture, which should be quite wet.
- Sprinkle with the cinnamon and sugar.
- Bake in the oven for 30-35 minutes.
- Best served warm with custard or ice cream.
