Strawberry and Coconut Popsicles

Ingredients:

  • 10oz Columbia Fruit frozen Whole Strawberries, Raspberries and Blueberries
  • 13.5 fl oz coconut milk
  • 2 tbsp honey, plus extra to taste
  • a pinch of ground cinnamon

Preparation:

  • Put berries in a blender.
  • Add the coconut milk, cinnamon and honey, adding more to taste, and blend until smooth.
  • Divide the mixture between eight 5 oz popsicle molds and secure an upright stick in each.
  • Freeze for at least 4 hours, until completely solid.
  • Dip the outside of the molds in hot water for a few seconds to release, and serve.
