Blueberry Fizz

Ingredients:
- 17oz water
- 14oz sugar
- 11oz Columbia Fruit frozen Blueberries
- 2oz lemon juice
- sparkling water to serve
Preparation:
- Put the water, sugar and frozen blueberries into a heavy-bottomed pan.
- Bring up to a boil over a medium-high heat, then take off the heat.
- Add the lemon juice and leave to let the flavors infuse as it cools.
- When it’s cold, blitz in a food processor or with a stick blender until liquidized.
- Sieve the liquid into a bowl or tub, taste and add some more lemon juice if you like your juice a little tart.
- Remember that this is the concentrate so it will seem very sweet and strong.
- Put the bowl in the fridge – as it chills, foam will set on the top so gently scrape this off.
- Pour the cordial into a bottle or jar and keep in the fridge.
- To serve, pour the desired amount of cordial over ice into a glass or jug and top up with sparkling water (and booze).
- Best served with half cordial and half sparkling water.
