Blueberry Fizz

Ingredients:

  • 17oz water
  • 14oz sugar
  • 11oz Columbia Fruit frozen Blueberries
  • 2oz lemon juice
  • sparkling water to serve

Preparation:

  • Put the water, sugar and frozen blueberries into a heavy-bottomed pan.
  • Bring up to a boil over a medium-high heat, then take off the heat.
  • Add the lemon juice and leave to let the flavors infuse as it cools.
  • When it’s cold, blitz in a food processor or with a stick blender until liquidized.
  • Sieve the liquid into a bowl or tub, taste and add some more lemon juice if you like your juice a little tart.
  • Remember that this is the concentrate so it will seem very sweet and strong.
  • Put the bowl in the fridge – as it chills, foam will set on the top so gently scrape this off.
  • Pour the cordial into a bottle or jar and keep in the fridge.
  • To serve, pour the desired amount of cordial over ice into a glass or jug and top up with sparkling water (and booze).
  • Best served with half cordial and half sparkling water.
