Caramelized Cherry Berry Blend Rice Pudding

Ingredients:
- 4 oz Columbia Fruit frozen Cherry Berry Blend
- 1 tablespoon granulated sugar
- 14 oz can ready-to-eat rice pudding
- 4 tablespoons natural yogurt
- 1 tablespoon soft light brown sugar
Preparation:
- Place the fruit in a saucepan with the granulated sugar and heat, stirring, for 3–4 minutes until the fruit has softened and defrosted.
- Tip the fruit and juice into a flameproof dish.
- Mix together the rice pudding and yogurt in a bowl, then spoon over the fruit.
- Sprinkle over the brown sugar and place under a preheated hot grill for about 2 minutes until the sugar starts to melt and caramelize.
- Cool slightly before serving.
