Ingredients:

  • 4 oz Columbia Fruit frozen Cherry Berry Blend
  • 1 tablespoon granulated sugar
  • 14 oz can ready-to-eat rice pudding
  • 4 tablespoons natural yogurt
  • 1 tablespoon soft light brown sugar

Preparation:

  • Place the fruit in a saucepan with the granulated sugar and heat, stirring, for 3–4 minutes until the fruit has softened and defrosted.
  • Tip the fruit and juice into a flameproof dish.
  • Mix together the rice pudding and yogurt in a bowl, then spoon over the fruit.
  • Sprinkle over the brown sugar and place under a preheated hot grill for about 2 minutes until the sugar starts to melt and caramelize.
  • Cool slightly before serving.
