Raspberry Ice Cream

Ingredients:
- 13 oz Columbia Fruit frozen Raspberries
- 1 tablespoon raspberry liqueur or lemon juice
- 7 oz mascarpone cheese
- 2 tablespoons powdered sugar
- ice cream wafers, to serve
Preparation:
- Place the frozen raspberries in a food processor with the raspberry liqueur or lemon juice and blend until roughly chopped.
- Add the mascarpone and powdered sugar and blend until smooth.
- Serve immediately with ice cream wafers.
