Ingredients:

  • 13 oz Columbia Fruit frozen Raspberries
  • 1 tablespoon raspberry liqueur or lemon juice
  • 7 oz mascarpone cheese
  • 2 tablespoons powdered sugar
  • ice cream wafers, to serve

Preparation:

  • Place the frozen raspberries in a food processor with the raspberry liqueur or lemon juice and blend until roughly chopped.
  • Add the mascarpone and powdered sugar and blend until smooth.
  • Serve immediately with ice cream wafers.
