Cherry Berry Blend Fool

Ingredients:
- 7oz Columbia Fruit frozen Cherry Berry Blend
- 2oz granulated sugar
- 7 fl oz crème fraîche
- 5 fl oz double cream
- 2 tbsp powdered sugar
- Shortbread, to serve (optional)
Preparation:
- Save a few berries for decoration and put the rest into a saucepan.
- Add the granulated sugar and warm through until the berries are soft.
- This should take about 2–3 minutes.
- Push the berries through a sieve making sure you get all the pulp, not just the juice.
- Whisk the crème fraîche and cream until thick, adding powdered sugar to taste.
- Fold together the cream and fruit purée and put into stemmed glasses or ramekins.
- Store in the fridge for up to 8 hours – remove 30 minutes before serving.
